Raspberry Berrete (Mocha Recipie)
A drink that's both easy to make and delicious. Something that you can make any time of year. Balancing creaminess from ice cream, acidity from raspberries and complexity from coffee.

When I was contacted for this competition I was re-listening to the album Around the World in a Day by Price and the Revolution. The competition stated that I needed to make a mocha-themed drink using a Ghiradelli product. It could have been blended, alcoholic, anything I could think of. I instantly thought of the song "Raspberry Berrete” and knew I needed to somehow incorporate it into my drink. And that’s how the drink raspberry barrette was born.
Ingredients:
1 cup of raspberries
2 tablespoons of sugar
2 tablespoons of water
1/2 lemon squeezed
1 cup of preferred iced coffee (cold brew, iced pour-over, etc.)
35g Ghirardelli black label chocolate
1 cup of ice
2 scoops of vanilla ice cream
Raspberry Compote
In a saucepan on medium heat raspberries, sugar, 1/2 squeezed lemon, and 2 tablespoons of water until reduced (about 10 min).
Iced Mocha
Combine iced coffee and 35g of black label chocolate
Raspberry Berret Assembly
Add iced mocha to serving cup
Mix in 2 tablespoons of raspberry compote
Add ice and scoops of icecream
Top ice cream with raspberry compote
